I recently changed my car's water pump and radiator. However, the temperature gauge keeps pointing towards 'cold'. What could be the problem?

A new radiator could be the reason that your car is running cooler, especially if your previous radiator was dirty or choked.

If your car is running 'colder' than normal, you may need to replace the thermostat.
